Avocado Toast with Egg

Creamy Avocado Pasta

  • 2 ripe avocados 
  • 250g (about 8.8 ounces) of pasta (spaghetti or fettuccine works well) 
  • 2 cloves of garlic, minced 
  • Juice of 1 lemon 
  • 1/4 cup of fresh basil leaves, chopped 
  • Salt and pepper to taste 
  • Grated Parmesan cheese (optional, for serving) 

 

  • Cook the pasta according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

  • While the pasta is cooking, scoop the flesh of the avocados into a blender or food processor. Add the minced garlic, lemon juice, and chopped basil leaves

  • Blend until smooth and creamy. If the mixture is too thick, gradually add the reserved pasta water until you reach your desired consistency.

  • Season the avocado sauce with salt and pepper to taste.

  • Toss the cooked pasta with the creamy avocado sauce until well coated.

  • Serve immediately, garnished with additional chopped basil leaves and grated Parmesan cheese if desired.
